For those of you who have never had Kalua Pig before here is a simple and economical way to try it.  While this is not true Kalua Pig, it is as close as you can get without going to a real luau or digging your own bake pit.  This recipie is actually for parties so it yeilds enough for 30 or more people so you might try scaling it back a bit.


 


Oven Style Kalua Pork


 


Pork butt, boneless.........20 lb.


Belly pork........10 lbs.


Rock Salt............1/2 cup


Liquid Smoke.........1/2 cup


 


Directions:


 


Cut pork butt in half.


Rub rock salt over the entire pork butt.


Rub liquid smoke over the entire pork butt.


Roast pork pieces on high heat to deep brown color.


Add water to about 2 inches deep.


Cover container with tight fitting cover and bake at 300* until pork is very tender.


Drain liquid from pork, let cool. Shred pork and chop skin.


Remove excess amounts of fat by separating the fat that rises to the top of the cooled liquid.


Add skimmed liquid back to the pork and stir to mix.

omg, i think my roommates and i are going to have a hog roast somtime in the next year.  we gotta get something to cook it over tho, can't just go and dig up our yard no can we ;0

To let you guys know for Thanksgiving we substituted chicken.  It was excellent.
